Happy Healthy Cooking Class for Children/ Parents

Lacy is planning a cooking class for parents with children from any earliest age. Her years as a pediatrician in China involved prescribing best nutritional foods from infants through toddler and beyond. She is planning two basic items and wherever the discussion leads. Happy Healthy from Childhood


     Unhealthy lifestyle causes obesity which is highly associated with insulin resistance resulting in diabetes. Obesity and diabetes are very serious health problems affecting millions of people in the United States. According to ADA report, 25.8 million children and adults — 8.3 percent of the population, have diabetes, and 7 million are undiagnosed in 2011 .Diabetes is a major cause of heart disease, stroke, kidney failure, blindness and amputation. So far, there is no effective way to cure it even though thousands of doctors and researchers have been fighting to do so for many years from so many ways. A real statistic is that in the year 2020, one out of every three kids will develop diabetes if we don’t change lifestyle. It is very urgent to prevent these health problems from childhood.  The key to achieving this is changing food content! 

    I have much pleasure to introduce myself to you. I was a pediatrician when I was in China. I have been engaged in clinical work,  research and teaching  in the fields of pediatrics, immunology, cellular biology, molecular biology and gene therapy since graduation from Jilin Medical University in China for more than thirty years. I am currently employed as a Senior Research Associate in the Department of Endocrinology at the University of Pittsburgh Medical Center in Pittsburgh doing diabetes and obesity research.

     Through my clinical work as a pediatrician and research on diabetes and obesity, I am most anxious to become more actively involved in directly reducing the impact of obesity and diabetes from food therapy to prevent and reduce health problems.

    Developing proper eating habits at an early stage would deeply influence an individual’s behavior, and is much less difficult than amending eating habits in adulthood. Improper feeding is the risk of causing childhood diseases, developmental delays and adult health problems such as obesity and diabetes. How to best raise their children is very important for every parent.

   It is hard to image how exciting when you got your first child.  I am sure that every parent wishes their children to have very happy healthy lives.  How to raise your children in healthy lifestyle is most important.  It is encouraging me to teach parents how to prepare health food for your children to help you raising your children in a healthy way and prevent adult health problems when they grow up. 

   I created a healthy recipe of child feeding which is starting from what the infant can tolerate and appropriate concentrations and balancing of nutrition.
